Campfire Baked Apples
- Apples (whatever type you prefer, 1 apple per person)
- Cinnamon Red Hots (Pea-sized, hard, red, cinnamon-flavored candies)
Peel and core apples. Fill the apple core space with as many candies as you can. Wrap the apple with aluminum foil and bury in hot coals of campfire. Apples should take approx. 20-30 minutes to "bake" and melt candies. (You can use a toothpick to check doneness, just don't push toothpick into the apple core space, because your candy-syrup will run out. When done, CAREFULLY remove aluminum foil, candy syrup will be HOT!!!
Campfire Banana Boats
- 1 banana per person
- semi-sweet chocolate (or standard chocolate bars - I use Hershey or Aero bars)
- Marshmallows
Do not peel banana - slice through skin halfway into banana fruit a slice lengthwise down the inner curve. Stuff with chocolate pieces and marshmallows. Wrap thickly in foil and place on hot coals. Should take approx. 20-30 minutes to "bake" and melt chocolate/marshmallow mixture. When done, CAREFULLY remove foil - Enjoy!!!
Marinated Campfire Chicken
- 4 boneless, skinless chicken breast
- 1/4 cup vinegar
- 1/4 cup catsup
- 2 Tbs. cooking oil
- 2 Tbs. Worcestershire sauce
- 3/4 tsp. dry mustard
- 2 cloves garlic, crushed
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. parsley
Whisk together all ingredients except chicken. Wash chicken and prick several times with a fork. Place chicken in a gallon ziploc bag. Pour marinade over chicken in bag. Make sure bag is sealed tightly. (Suggest putting the marinating chicken in the cooler on Friday and cook it for the Saturday night dinner. The best way to cook it over a fire is to use a chicken basket which is like a two sided grill grate with a long handle. This way you can prop it over the fire and turn every 5 to 8 minutes basting with leftover marinade. Cook about 20 minutes depending on thickness of chicken. Discard marinade.
Marinated BBQ Chicken
- One chicken cut up into pieces
- 1/2 cup of olive oil
- 2 garlic cloves minced
- 1 cup of fresh lemon juice
- 1 tablespoon of chopped
- fresh rosemary (or dried)
Mix all ingredients together. Pour in to a ziploc bag and add the chicken. Turn several times to coat the chicken. Let it marinate overnight and B.B.Q. the next day.
Onions, Mushroom, and Peppers
- 1 whole onion (doesn't matter which kind as long as it isn't a green onion) Sliced
- 1 Pepper (for color I buy one of each color and use about 1/3 of each color)
- 1 basket of sliced Mushrooms
- 3 Tsp of butter or margarine
- assorted seasonings
Slice the onion and separate rings. Then cut up pepper to large bite size pieces. Combine onion slices, peppers and sliced mushrooms in foil. Take butter and cut into pieces and put on top of food mixture. Season with seasonings of your choice. I like to use garlic powder, onion powder, season salt, and pepper. Season to taste. Roll foil up around it and set on grill or saute until onions are tender. Be sure not to over cook as peppers become soggy. Serves 4
Potatoes On The Grill
- 5 - 6 good size Idaho potatoes with the skin left on and scrubbed well and sliced into rounds
- 4 -5 garlic cloves chopped fine (you can use more if you like garlic)
- 1 stick of butter or margarine
- 6 slices of raw bacon cut into 1" pieces
- 1 large onion chopped coarsely
- salt and pepper to taste
Use a large piece of Heavy duty foil (double sheets if regular foil), in the center alternate all of the ingredients until all used up. Fold foil to make a rectangle packet. Place on grill and cook. Will take approximately 40 - 50 minutes on a medium grill. Note: also great in the oven or microwave. If doing in an oven, set temperature to 350 degrees and cook for about same amount of time. If cooking in the microwave, place ingredients in a casserole dish with a cover and cook on high for 10 minutes then rotate and cook for 5 minutes more. Check to see if potatoes are tender, if not cook till tender. Enjoy!
Marinated Grilled Flank Steak
- 1 1/2 pounds flank steak, steak or London broil
- Juice of one lemon
- 1/2 cup soy sauce (we use lite soy sauce)
- 1/4 cup or more dry red wine (white is fine too)
- 3 Tablespoons vegetable oil
- 2 Tablespoons Worcestershire sauce
- 1 large clove garlic, sliced
- freshly ground pepper to taste (we use a lot)
- 3 chopped green onions (or chives)
- Optional: chopped dill weed
- Optional: celery seed (I have used celery salt in the past also)
Mix all ingredients in the pan in which meat is to be marinated. Marinate meat for 2-12 hours in the refrigerator, turning occasionally. I often will put the meat in a zipper bag in a bowl, it makes turning easier. Broil meat over hot coals for 5 minutes per side for rare meat. Slice meat on the diagonal across the grain and serve (for flank steak).
