Barbecue! Bible : Sauces, Rubs, and Marinades, Bastes, Butters, and Glazes - by Steven Raichlen, Ron Tanovitz (Illustrator) "The most important lesson Raichlen offers is his careful explanation of the components of great barbecue, which builds upon different layers of flavor." Whether you're looking for the perfect marinade, the right mix of spices to "dust" you're entree, a different glaze to produce a spicy flavor, or a great dipping sauce - all this and more is in store for you in this book. Weber's Big Book of Grilling - by Jamie Purviance, Sandra S. McRae, Weber (Photographer), Tim Turner (Photographer)
Search for a favorite recipe or browse through individual chapters and benefit from Weber's grilling history with helpful guides and sidebars about cuts of meats, cooking methods, tips, glossaries, and illustrated instructions. This book is packed with information as well as recipes -- for example, "Starters" includes a helpful chart to match up appetizers with entrées along with a recipe for Chinese Chicken Noodle Soup (yes, on the grill -- the Asian marinade for the chicken becomes the base for soup), and "Vegetables" includes a handy vegetable grilling chart along with sections on grilling for vegetarians and quick and easy meat substitutes. "Publisher's Weekly" may not have given this one a raving review - BUT - readers and users of the book give it super high scores - and in my humble opinion, that's what counts.
The Grilling Encyclopedia : An A-Z Compendium on How to Grill Almost Anything - by A. Cort Sinnes
If you're like me, you'll enjoy the witty stories in this book as much as the wonderful recipes and great grilling ideas. "More than a reference, it's easy and fun to read." What a great way to "learn" while you cook!
Marinades : The Secret of Great Grilling - by Melanie Barnard
This book begins with a nine-page chart that gives the cooking times, proper grill temperatures, and how to know when the food is done for a wide range of food items from burgers and ribs to shrimp, corn, and tofu. (Shrimp are done when they are opaque throughout; peppers are done when their skin is blackened and the flesh is tender.) You'll want to keep this chart handy by the grill -- and the recipes are delicious!
